Orange Gingerbread recipe
The fruitiness of oranges and the spice of ginger are a match made in holiday heaven. Serve this livened seasonal loaf with cream cheese frosting or orange marmalade.
Ingredients:
1 ¼ cups orange juice
1/3 cup applesauce
1 cup molasses
1 tablespoon grated orange zest
2 ½ cups whole-wheat flour
2 teaspoons ground ginger
1 teaspoon cinnamon
1 teaspoon baking soda
½ teaspoon salt
½ cup raisins
Directions:
1) Preheat oven to 350°F. Lightly grease a 9 x 13-inch pan.
2) In a large bowl, whisk together juice, applesauce, molasses, and zest. In another large bowl, sift together flour, ginger, cinnamon, baking soda, and salt. Pour into wet mixture; mix well. Stir in raisins.
3) Pour mixture into prepared pan. Bake 35 to 40 minutes, until a toothpick inserted in the middle comes out clean. Cool slightly and serve.
