Gingerbread Cake recipe
Gingerbread cookies may be the norm for holiday treats, but gingerbread cake is the supreme. Unbelievably moist and tender, this spiced cake would be equally luscious served plain or frosted.
Ingredients:
1 cup all-purpose flour
½ cup whole wheat flour
¼ cup packed brown sugar
¾ teaspoon cinnamon
¾ teaspoon ground ginger
½ teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
½ cup buttermilk
½ cup applesauce
½ cup molasses
2 egg whites
Powdered sugar, for dusting
Directions:
1) Preheat oven to 350F. Lightly grease an 8 x 2 x 2-inch baking pan.
2) In a large bowl, combine flours, sugar, cinnamon, ginger, baking powder, baking soda, and salt. In a small bowl, whisk together buttermilk, applesauce, molasses, and egg whites; add to dry mixture and stir well to mix.
3) Pour into prepares pan; bale 30 to 35 minutes, until a toothpick inserted in the middle comes out clean. Cool slightly, dust with powdered sugar, and serve.
