Blueberry Gingerbread recipe
Blueberries make for an unexpectedly fruity holiday spice gingerbread. Serve warm slices of this seasonal treat with honey butter, fresh jam, or a drizzle of maple syrup for a special holiday snack.
Ingredients:
½ cup butter, softened
1 cup sugar
1 egg
2 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
½ teaspoon ground ginger
½ teaspoon salt
1 cup buttermilk
3 tablespoons molasses
1 ½ cups blueberries
3 tablespoon sugar
Directions:
1) Preheat oven to 350F. Lightly grease a 9-inch baking dish.
2) In a large bowl, cream together butter and sugar until fluffy. Add egg and beat well. Set aside. In a separate large bowl, sift together flour, baking soda, cinnamon, ginger, and salt.
3) Alternately add dry ingredients and buttermilk to the creamed mixture, blended each addition in before adding the next. Do not over beat. Add molasses and blueberries; mix gently.
4) Pour mixture into prepared dish. Bake 20 to 25 minutes, until a toothpick inserted in the middle comes out clean. Serve slightly warm.
